Every edition of La Tomatina uses a huge quantity of tomatoes! Organisers have described using locally sourced tomatoes grown specifically for the event, since these aren't tomatoes intended for the table.
They arrive by truck on the morning of the battle and are unloaded directly into the crowd, ready to be thrown. Once the hour-long battle ends, the streets of Buñol are cleaned with the help of fire trucks and hoses, the natural acidity of the tomatoes actually helps disinfect the cobblestones.
It's one of the reasons La Tomatina has built a reputation as more than just a food fight: it's a tradition that reuses tomatoes that wouldn't otherwise reach the market, closing the loop with a clean-up that leaves the town spotless by the afternoon.
